Ingredients

  • 2 1/2 teaspoons vegetable oil
  • 1/2 onion, chopped
  • 3 carrots, chopped
  • 3 stalks celery, chopped
  • 2 small potatoes, chopped
  • 1 bay leaf
  • 5 cloves garlic, minced
  • 2 cups dried split peas
  • 1/2 cup barley
  • 1 teaspoon salt
  • 6 1/2 cups water
  • 1/2 cup parsley, dried or fresh
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper

Directions:

In large pot over medium heat, sauté oil, onion for 5 minutes, or until onions are translucent. Add water, peas, barley, bay leaf, garlic, salt and pepper. Bring to boil and reduce heat to low. Simmer 2 hours, stirring occasionally. Add carrots, celery, potatoes, parsley, basil, thyme, pepper. Simmer 1 hour, or until the peas & veggies are tender
