Music – Porcelain hardneck variety. Originated from Italy and brought to Canada in the 80’s by Canadian garlic grower: Al Music. It was named by the Ontario Garlic Growers Association in recognition of Mr. Music, AKA “Ontario Garlic”. It performs well in cold climates. Chef’s love its robust flavor and huge, easy to peel cloves. Music is always a huge producer and one of the most popular and favored garlic by many growers.
Music Garlic Characteristics: 4 – 6 large easy peeling cloves per bulb. 25 – 30 cloves per pound. Mid harvest. Stores 6 months. Medium – Hot.
Korean Red – Asiatic hardneck variety. Attractive bulbs with brown to auburn colored clove skins. Not a variety to be overlooked, Korean Red is comparable in flavor to its Purple Stripe cousins, but with longer storage quality. Asiatics have peculiar umbel capsules that are extra elongated. They are weak bolters, but they do produce very large bulbils. When planted in the fall the bulbils are capable of producing mini garlic bulbs and garlic scallions in the spring.
Korean Red Garlic Characteristics: 7 to 10 cloves per bulb. 60 to 65 cloves per pound. Mid harvest. Stores 6 months. Zones 3 to 10. Produces scapes. Hottest.
Early Italian Red – Artichoke softneck variety. Introduced to the U.S. from Telowa Farm, in southern Oregon, AKA “Early Red Italian”. This Italian cultivar is easy to grow, producing large bulbs tinted with hues of crimson and red. In the garden, the leaves turn a slight reddish tint just before harvest. Early Italian Red is quite flavorful for a softneck, without producing too much heat: a splendid ingredient for your favorite marinara sauce.
Early Italian Red garlic characteristics: 10 – 15 cloves per bulb. 85 – 95 cloves per pound. Early harvest. Stores 6 – 7 months. Recommended for Zones 2-10. Mild.
Silver White – Silverskin softneck variety. Silverskins can grow in varied climates: from maritime, cool wet winters to arid, hot dry winters. In storage, they can handle more humidity than other softnecks, making them some of the longest storing garlic of all. The bulb skins are white with hints of pink and the flavor is spicy.
Silver White Garlic characteristics: 9-10 cloves per bulb • 60 to 75 cloves per pound • Mid to late harvest. Stores 8 to 10 months! • Zones 4 to 10 • Does not produce scapes • Hot
